Avacado Burger Delight-Recipe


My recipes are a twist- a healthy, delightful twist. This Sunday I tried an avocado burger with broccoli oats cutlet in between. My son is new to these fast food jargon. He is four years old and I have raised him on basic daal (lentil), Rice, vegetables ,Rice Pudding, chapatti kind of diet. Am glad he likes all that. A week back, he returned from his preschool and requested me to make PURGER. He had seen his friend eat and I explained to him that it called a BURGER.

I thought to give the usual burger a twist and make it for him. For sure I wanted to introduce this food at home and not buy him from outside. That's just me. :) And this, today we landed up having this for breakfast. I am putting down the recipe for the same.

Serves - 4

THE WHAT?
For cutlet

2 medium sized boiled potatoes
5 medium size florets of broccoli
1 cup of oats
½ tsp aamchur (Dry Mango) powder
Salt to taste
3 tsp oil for shallow fry

For Guacamole
2 medium size ripe avocados
1 tomato finely chopped
Half onion (medium size) finely chopped
1 garlic clove finely chopped
5 tsp parsley leaves finely chopped1 tsp green chilies finely chopped
½ lemon juice
½ tsp black pepper powder
Salt to taste

THE HOW?

For cutlet
·       Boil two medium size potatoes and keep aside.
·   Take broccoli florets and immerse in boiling water for five minutes. Cover it with lid. This process helps if there are insects or worms in florets. Also, it makes broccoli a little tender.
·  Add broccoli florets in a mixer and, using the pulse option, make a coarse mince of the florets. Please note that we do not have to make a paste. Just a coarse mincing. Some can also take the florets and use the grater. Very fine broccoli powdery stuff will be formed which can be used as well. 
· Once this is done, take the minced broccoli. Add the two mashed potatoes and one cup of powdered oats. Add a salt as per taste and half a teaspoon of dry mango powder. Mix them well.
·       Make a flat round cutlets and shallow fry them. Before you put them to fry, roll them over oat powder and the crispiness that shall come will be amazing. The cutlets are ready.

For Guacamole
·    Take two medium-size ripe avocados. Deseed it and scoop out the fruit. Drizzle half a lemon juice over it. Add finely chopped onions, garlic, parsley, and tomatoes. Add green chili and slight black pepper powder. Add salt to taste. You can now mix all the ingredients and BINGOOO-the guacamole is ready. I normally use my hands to make a nice mash because I have to use it as a spread instead of butter or cheese or mayonnaise.

·  Once the guacamole is ready-take a hamburger bun. Split it open. Spread the guacamole on the base bread and put the cutlet on the top. Cover it with the top bread and Voila-Your burger is ready to munch on.
·       You may prefer to toast it slightly on Tawa (Pan) before serving.

Things to keep in mind

·       You can choose to grate the broccoli florets by taking a big floret and running it on a grater. When doing this do not blanch as it makes the broccoli tender and difficult to grate.
·       I tend to keep the cutlets simple as it is part of a bigger dish and not a snack by itself.
·  If you want, you can make it the usual cutlet way, just add some chopped onions, green chilies, chopped carrot and coriander with other spices. But this one is broccoli burger-hence I have limited myself to oats and broccoli as the main ingredients.
·       The broccoli cutlet thus will look something like this.


Feel free to add more oats if you find the mixture too mushy.

Parsley is my favorite flavor, but if it doesn’t appeal to your taste buds, then use our Indian favorite-coriander leaves. :)

 Avocado sandwich is also very popular in my house which is simply putting the guacamole spread over the big square bread and toasting it crisp on a Pan.
 Guacamole is also interestingly used as a dip with your nachos or other chips. That way you know that you are dipping in healthy and not the usual canned sauces or dips which are high in sodium and fats. I shall be talking about the benefits of avocados and how we can use more and more of it in our recipes.
